HEALTHY(ISH) BURRITO BOWLS
But sometimes, we go sans shell. These bowls are perfect to tuck into while binge watching Scandal or being forced into watching basketball. You can do black beans instead of chickpeas if you're feeling that (but we all know I love a good roasted chickpea).
The longer you cook those little guys, the crunchier and crispier they'll be. So plan a little ahead if you want prime crunchiness!
1 can chickpeas, rinsed and patted dry
2 servings grains
1/4 tsp hot sauce sauce (more or less to taste)
1/4 tsp chili powder or cayenne pepper
1/4 tsp paprika
1/3 tsp cumin
1/3 tsp garlic powder
1 tsp chili flakes
grated cheddar cheese
fresh chopped cilantro
plain greek yogurt
1. preheat oven to 350ºF. toss chickpeas in olive oil to coat, then toss with hot sauce and all spices. lay out in single layer on sheetpan and bake 25 min, shaking the pan halfway though.
2. cook grains of your choice while chickpeas are in the oven. if you're in a time crunch, use a microwave package of brown rice!
3. arrange in bowl with all toppings and stir to combine.
