BRUSSELS SPROUT PASTA WITH BACON AND PARM
It's January. You're trying really, really hard to adult. Like, you bought a vegetable JUST last week! How haven't you lost 14.8 pounds yet!?
Coax yourself into eating some green food by surrounding it by carbs, cheese, and bacon. Baby steps, right?
Crank the oven to 425. Roast the Brussels sprouts in olive oil, sea salt, and cracked pepper. After they've been in the oven 8 minutes, boil a big pot of salted water. Cook pasta of your choice while the sprouts finish cooking. If you're adding bacon, cook that at the same time.
Serve with Parmesan or goat cheese and stir to melt. This would also be tasty with grilled chicken!
