ROASTED TOMATO PASTA + CREAMY AVOCADO SAUCE

Is "summer in a bowl" too cliche? Because, well... that's what this is. Tomatoes are at their prime now, and they pair absolutely beautifully with fresh garlic, mozzarella, and parmesan. You can enjoy this dish in its simplest form—noodles, a few glugs of olive oil, plenty of sea salt and cracked pepper, garlic, and tomatoes—or, you can take it a step further by throwing together your own creamy avocado "sauce".

I tried using brown rice pasta this time around. It's prettttyyy good, if you DO NOT OVERCOOK IT. Seriously, pay close attention. Otherwise, it'll get a little gummy.

To execute the timing of this dinner perfectly, listen up: you'll want to start the tomatoes first. So wash and pat dry, then set in a medium bowl. Mince garlic and toss the tomatoes in olive oil, garlic, sea salt, and freshly cracked pepper. Throw them in the oven and boil your water. While the pasta is cooking, you'll make the avocado "sauce" (if you're going that route).

You'll roast the tomatoes until you hear them POP! This releases soooo much flavor.

If you want to make the avocado sauce even creamier, throw all the ingredients in your food processor (a blender would work fine here too). I just used a wooden spoon and plenty of elbow grease.

ingredients
long pasta (brown rice spaghetti, spaghettini, angel hair, etc)
grape tomatoes
4-5 cloves garlic
olive oil, sea salt, cracked pepper
avocado
cheese (mozzarella, parmesan, romano, etc)
fresh basil

instructions
1. Preheat oven to 425ºF. Rinse tomatoes and pat dry, and mince garlic. Toss tomatoes in olive oil, half the garlic, sea salt, and cracked pepper. Spread out on baking sheet and bake for 15 minutes or until tomatoes start to "pop" or slightly collapse.
2. While tomatoes are baking, boil water for pasta. Cook pasta according to package directions. 
3. While pasta is cooking, combine avocado, remaining garlic, julienned basil, half the cheese, and a few healthy glugs of olive oil. Use a wooden spoon to make the mixture reach the creamy stage.
4. Once pasta is al dente, tomatoes are collapsed, and avocado sauce is prepared, plate the dish and top with extra cheese and basil.
