TANGY POLENTA WITH VEGGIES + RUNNY EGG

Disclaimer: I'm very much a newbie when it comes to polenta. You'll probably see a few polenta recipes here in the next couple of weeks as I get better and better at it. This tasty iteration is blended with plain Greek yogurt and goat cheese, and topped with all kinds of goodies. Read on:

Here's what you'll need:

polenta
fresh goat cheese
plain greek yogurt (optional)
asparagus (or any other veg)
onion
tomato (roma or grape/cherry)
BACON
egg

You can use polenta in a tube to reduce cooking time, or if you prefer to make your own with cornmeal, go for it! I blended with goat cheese and a dollop of plain Greek yogurt in the food processor, but you could also cook the polenta down in a pan with some vegetable or chicken broth and add the dairy at that time.

Toss the polenta in your skillet to get some yummy fried texture, and start frying the green veggies first. When they're about halfway through, add onion, and at the very end, your tomato.

If you'd like, poach an egg while the veggies are cooking up. Remember to add a little white vinegar to your water to keep the egg white together!

Combine all ingredients and split egg. Enjoy!
