NO-BAKE COOKIE DOUGH CHOCOLATEY CUPS

These little chocolatey treats are perfect for your office holiday party, a cookie/candy swap, or just to have on hand (in the freezer) at home! They have the texture of a thick Reese's peanut butter cup, but don't have any nuts.

You can make whatever chocolate adjustments you like—if you like dark chocolate better than semisweet or milk, use that for the outside. And if you really don't want to give up the peanut buttery aspect, make peanut butter cookie dough to use inside instead!

First, you'll make the cookie dough. Try really hard to only have a bite or two before moving on to the next steps. The cookie dough recipe DOES account for those bites. :)

instructions
In large bowl, beat butter + brown sugar. Mix in cream cheese + white sugar until well combined.
Add vanilla, baking soda, salt, + flour until dough is formed. Stir in mini chips. Roll cookie dough into small balls and set aside. In small bowl, melt chocolate chips. Line muffin tins with cups. Spoon melted chocolate into each cup (enough to coat bottom of cup). Place cookie dough balls (slightly flattened) on top.
Pour remaining melted chocolate on top, then shake tin to even out chocolate. Garnish with sea salt (optional).
Chill in fridge for at least 30 min.

4 tbsp granulated sugar
1 1/4 cups all-purpose flour
1/4 tsp baking soda
1/4 tsp salt
2 tsp vanilla extract
3/4 cup mini chocolate chips
1 cup semisweet chocolate chips
sea salt, for garnish
