YOU GUYS. I just whipped this up this morning and HAD TO SHARE. I'm a huge breakfast person—give me eggs florentine or biscuits and gravy and I'm your new best friend. But making an egg breakfast before work is difficult and not the first thing you want to do when you're just trying to get out the door on time. Enter this delicious breakfast sandwich.
I picked up these multigrain sandwich thins at Trader Joe's over the weekend, and this Philadelphia smoked salmon cream cheese at Target. It's got real salmon in it, but is only around $3 and 70 calories per serving.
1 multigrain sandwich thin (or bagel thin) 1 egg Cream cheese of your choice
First, pop the sandwich thin in the toaster. Then, spray your pan and start frying the egg. By starting the bagel first, everything will be timed to end correctly.
Once the sandwich thin is toasted, spread cream cheese on one side. I did a normal amount on one side of the sandwich thin, and a small amount on the other side just to hold the egg in place. When the egg is ready, just slide onto the bagel and assemble the sandwich.
You can switch up the ingredients based on your cream cheese and egg preferences, but it seriously only took 5 minutes to make—totally doable before heading out the door!
