I take shortcuts when I can, so frozen veggies and pre-diced onions get two thumbs up from me.
A pretty crucial thing to know how to make at this point in your life is basic rice. It's easy—two cups water for every one cup rice. Boil, then lower the heat and simmer for 15 minutes. Stir so no rice ends up stuck to the pot.
When the rice has about seven minutes left, pour 1 tbsp oil and the frozen veggies into a wok or large frying pan. Sauté for 4 to 6 minutes. I like to add soy sauce or stir fry sauce and some fresh onions in the last minute or so of cooking.
Add chow mein noodles or peanuts for added flavor and crunch.
